Baked Haddock with Cheese

I usually cook haddock with tomatoes and onions, but I felt I needed something simple and quick. After searching the Internet I found this recipe.

The ingredients I used were.

  • 1 cupful of goats milk
  • 1 tablespoon of gluten-free flour
  • 50 grms of butter
  • 2 or 3 haddock fillets
  • 1 cupful of grated cheese.
  • salt and pepper to taste

These quantities make enough for perhaps a friend and myself, but as I was hungry, I made it for one.

The method was as follows.

  1. Melt the butter in a saucepan.
  2. Add the flour, mix with the butter and when smooth add the milk, salt and pepper.
  3. When thickened add the grated cheese and stir constantly over a low heat until the cheese is melted and the sauce is smooth.
  4. Meanwhile arrange the haddock fillets in an ovenproof dish and pour the cheese sauce over the top.
  5. I then baked it in the top of the bottom oven of the AGA for thirty minutes.

  1. Typing isnt improved when you miss a stage of the method out….
    Point 3…is blank….maybe its where the fish is cooked…unless you are a penguin and like your fish raw….
    Recipes are notoriously difficult to revamp….cups to grammes to ounces…and they dont convert exactly…
    Always check ready grated cheese…as it may be contaminated with wheat flour used to keep the strands of cheese separate…

    Some fresh parsley would be a good addition…more vit c…

  2. Is that better? I’m an engineer so I don’t know what an ounce is and a cup is something you drink tea out of! Waitrose contaminate their grated cheese with potato flour

    Sorry but all my parsley has died! So it’s rather less than fresh!
